This book has one-hundred-thirty-nine recipes written with ingredients listed . Recipe chapter titles are: Appetizers ; Soups ; salads ; Vegetables ; Eggs & Tofu ; Seafood ; Poultry ; Meat ; Rice and Noodles ; Desserts . Before the recipes , there is a three page introduction by the author . Every chapter has a page about that food category ; the recipes have one or more sentences about some feature of an ingredient , technique , cultural or personal item ; many have a color photograph by James Murphy . In a few places within the text there are additional photographs by Stephanie Jan .
