Abstract
This book , mostly written in Chinese , has sixteen recipes in English amd seventy-eight in Chinese . There is an English preface by Xie Binxin , a four page survey of Beijing cuisine by Chang You-Luan , and a single page about the taste of Beijing dishes by Zhang Junqui . The recipes are from six restaurants in Beijing . A few paragraphs before most of the recipes discuss history , culture , and food . There are magnificent photographs of all recipes , restaurants , cold platters , farms , and other items . This is the first of a nine-volume series titled Authentic Chinese Cuisine . They were published in cooperation with Shanghai Food and Drink Service Company to introduce Chinese cuisine , primarily through illustrations , to the people of Japan .
