Abstract
This book has two hundred sixty-five recipes with the ingredients listed . The first Singapore edition , published in 1952 , has not been located . This second edition has recipe chapters titled : Chicken ; Duck ; Fish . Pork ; Beef ; Mutton and Lamb ; Game ; Seafood ; Egg ; Vegetables ; Soup ; Chinese Chafing Dishes ; Sandy Pots ; Rice ; Noodles , Pastry ; Sweet Dishes ; Sweet and Sour Dishes ; Bird's Nest ; Sharks Fins ; Chop Suey ; and Seasonings . Before the recipes is a two page foreword by Rt . Hon . Malcolm MacDonald , Commissioner-General of South-East Asia . There is also a single page preface by Lady Y.P . McNiece . Two pages include an author's note , and people and press opinions . There is a seventeen page , six chapter introduction about cooking utensils , choice and variety of foods , seasoning , methods of preparation and cooking , and seven suggested menus . Recipes are titled in Chinese and English , some illustrated with black and white line drawings .
