Abstract
This book , mostly written in Chinese , has eighteen recipes in English and ninety-seven in Chinese . There is an English preface by Lie Jie-qong , a single page by Aisin Jue Luo discussing Imperial flavor , and another page by Pu Jie about Qing Zhen dishes . The recipes are from five restaurants in Beijing . A few paragraphs before most of recipes discuss history , culture , and food . There are magnificent photographs of all recipes , restaurants , dim sum in the Beijing style , Moslem mosques , wines and spirits , and other items . This is second in the nine-volume series titled Authentic Chinese Cuisine .
